
it was a gorgeous day! sunshine finally came here! i didn't even mind when it was blinding me, i kept on sitting on my deck, facing it bluntly, soaking up every last sun beam! the mood is up, the inspiration is on. but dinner time was approaching rapidly. so i whipped up a quikie. i saw a pretty picture in a magazine: it was an egg dish, with hash brown potatoes, topped with some fresh veggies. i made my own version without even reading the recipe. no need to read, when i'm inspired... picture worth a 1000 words...
Spring Hashbrowns with Eggs
4 medium red bliss potatoes, grated
1 red bell pepper, diced
1 medium white onion, diced
2 stalks of celery, diced
2-3 cloves of garlic, minced
fresh dill and parsley, chopped
2 TB spoons of clarified butter for frying, or any other lard
2 t spoons dried oregano
2 t spoons ground coriander
1 t spoon paprika
salt and fresh ground pepper to taste
6 eggs
1} Heat the iron skillet and melt the lard
2} Add all the veggies and fry on high heat for couple of minutes, stirring, season and then reduce heat and simmer, stirring
3} Make 6 indentation and crack eggs into them; cover and cook until eggwhites are solid, over med-low heat
4} sprinkle with fresh herbs and serve
